I bought this Arrowhead/Ngaku/Chiku to make chips.. I read blogs saying that it is easy to make and very nice and addictive, so I want to try.. Happen to see it in the market, so I quickly buy.. It cost me $4 per kg..
Its not the same as water chestnut, even though they look like... it is much bigger than chestnuts

First, take one bulb
Using the peeler, peel the skin away, don't waste too much coz then, less chips for us :)
I don't have a slicer, so I used knife to slice as thinly as I can. It will be a breeze if there is slicer.. After it is peeled and sliced to chips thickness, soaked it in salt water
To avoid splashing during frying, I dry it on the newspaper/tissue backing
There you go, the end product :) It is nice and if want to make, better make in HUGE batches in one go to save the time from all the peeling and slicing.
